Easy Yummy Side

I love Squash but I was getting tiresome of the basic green & yellow squash so I wanted to try something new. Acorn Squash - my new favorite side! It's SO yummy, just melts in your mouth! This veggie may look hard to cook but it's quite simple!
Here is what they look like at the store. Reminds me of a Thanksgiving decoration!
Cut the squash in half, scoop out the seeds and put them face down on cookie sheet.
Bake at 350 degrees for 45 min or until soft.
Scoop out insides and in a bowl mix with butter, garlic power and garlic salt.....and your done!
You can also opt for the sweeter version with just butter & brown sugar.
Even my husband approves of this healthy nutrient packed veggie! It is very high Vitamin A and also includes Vitamin C, Potassium, dietary fiber, manganese, folate, Vitamin B complex, omega 3 fatty acids, copper and tryptophan.
